8. Pumpkin Pie In A Cup

1 teaspoon unsalted butter
1 teaspoon pumpkin pie spice
1/3 cup pumpkin puree
1 large egg
1 tablespoon milk, almond milk or cream
2 tablespoons brown sugar
Take a small bowl, whisk together the egg, milk, pumpkin puree, brown sugar, and pumpkin pie spice. Pour into you mug of choice. Microwave for 2 to 5 minutes, or until you can insert a knife into the center and it comes out clean. Let it cool, and add topping as you please. Whipped cream is a personal favorite!
